RECIPE: Mac & Cheese Delight

Mac & Cheese Delight
If you are like most of us, you are probably running out of ideas as to what to make for dinner.  With the summer season approaching, it is always nice to pull out a recipe that is both enjoyable to eat and super-easy to make...and one that makes for great leftovers.


Who doesn't love the classic mac & cheese?  Let's see those hands up in the air!  Yes, it is a favorite of many.  That's why we are making mac & cheese with a twist.  In the form of a casserole, Mac & Cheese Delight is a dish packed with lots of delightful little surprises.  It is sure to be a hit at your dinner table, so jot this recipe down and keep it handy as a quick "go-to". 

Mac & Cheese Delight
A recipe from the Sweet Delight Kitchen 

 What you need:
2 boxes of white cheddar mac & cheese (prepared as per box instructions)
 2 heads of broccoli (chopped, boiled & drained)
1 large onion (diced)
1 yellow bell pepper (diced)
8 slices of white cheddar processed cheese (cut in strips)
8 slices of cheddar processed cheese (cut in strips)
2 boneless, skinless chicken breasts (baked & cubed)
parmesan cheese
salt & pepper

 
Directions: 
  In a large casserole dish, combine prepared macaroni and cheese mixture with the boiled broccoli.  Add in the cubed chicken breast. Add in the diced onion, diced yellow pepper and mix well.  Add in salt and pepper to taste (we use 10 dashes of salt/10 dashes of pepper) and mix well.  Lay strips of cheddar and white cheddar cheese over the top of the mixture (alternating the types of cheddar), covering the entire casserole.  Sprinkle lightly with parmesan cheese.  Cover with tinfoil and bake at 350°F for 35 minutes.  Remove the tinfoil and continue baking until cheese is lightly browned and bubbly. Sprinkle with parmesan cheese again before serving.

Makes approximately 8-10 servings.

The nice thing about this recipe is that it is an almost-from-scratch-recipe...meaning that it is made from convenient, prepared food and food found in most cupboards and fridges.  If you are not as pressed for time, you may wish to use freshly grated cheeses which would certainly amp the quality, but the processed cheese is quicker and helps make for neater servings.

Other veggies such as carrots can also be added or substituted for broccoli. Keep in mind, if you have fussy eaters who dislike broccoli, but love mac & cheese, this could be a great way to disguise it.

Mac & Cheese Delight tastes even better after refrigeration and reheating, so it makes a great leftover dinner.
